The list of tables is dynamically retrieved from your Azure account, so that any additions or deletions are immediately reflected when you connect with the driver. You can use the CreateTable stored procedure to create a new table.

Azure tables require both a Partition Key and a Row Key. Both will need to be set for all queries besides SELECT queries.
